Moribashi Plating Chopsticks - Round Ebony Handle
Moribashi are the specialized chopsticks Japanese chefs use to plate sashimi, arrange garnishes, and compose small dishes with precision. Kanaguchi Manufacturing has made moribashi in Miki City, Hyogo Prefecture since 1929, and remains the only producer in Japan to handle the entire process in-house, from forging the metal tips to shaping the wooden handles.
The handle of these moribashi is turned from ebony, a dense hardwood with a tight, lustrous grain that deepens with polishing. Paired with a heat-treated stainless steel tip and joined by a stainless steel collar, the round profile sits naturally in the hand for extended plating work.
